For the days when most people ride the trainer, the Castelli Estremo 2 Shoecover is Castelli's warmest bootie. A fleece-backed Polartec® AirCore™ outer pairs with a second high-loft fleece layer, and a single-layer "wheel well" by the ball of the foot keeps the fabric from rubbing on the crank. It's cut high for extra warmth and gives reasonable splash protection.
